Have you ever made a purple potato salad? This is a real thing at the shack and I would like to introduce you to your new favorite potato salad. You are welcome!

Doesn’t it look fake though …? But it isn’t! These are real organic heirloom fingerling potatoes. And you already know I don’t do photoshop so this is the most real deal. Woza! I’m telling you, nature has a way of showing off that never ceases to amaze me!

Purple potatoes have an earthy rich flavor and buttery texture, so you don’t need much help to help their flavor shine through. A really good cold pressed extra virgin olive oil, fresh fragrant herbs and a handful of toasted crunchy nutty pepitas or pine nuts will be fantastic.

Initially I made this salad with a blood orange infused olive oil because I’m obsessed and can’t get enough  of it. However in the recipe card I just say extra virgin olive oil because many people don’t fancy flavored oils with their potatoes and it’s also kind of a difficult item to find in most grocery stores. You decide what wild variations you’d like to try.

Purple Potato Salad Recipe

Heirloom purple potato salad with perfect 6 minute eggs!

Ingredients

  • 2 lb purple fingerling potatoes organic
  • 3 tbsp extra virgin olive oil + more as needed
  • 1/2 tsp sea salt + more to taste
  • 2 leaves bay
  • 1/2 bunch fresh dill snipped
  • 1/2 bunch fresh chives or 3 scallions snipped
  • 4 eggs organic
  • 1/4 c pepitas or pine nuts toasted
  • Freshly cracked peppercorn medley to taste
  • Red pepper flakes to taste

Instructions

  • Rinse and scrub the potatoes well. Transfer to a heavy bottom pot and cover with a couple of inches of cold water. Bring to a boil, add a heavy pinch of salt + the bay leaves and cook until al dente (a knife inserted in the center should come out easily without much resistance). Drain the potatoes in a colander and allow them to dry off in their own steam for a few minutes until cool enough to handle.
    2 lb purple fingerling potatoes, 2 leaves bay
  • Meanwhile in a salad bowl mix together the olive oil, sea salt, dill and chives. Cut the purple potatoes in halves or thirds depending on their size and add them on top of the olive oil dressing. Gently toss to coat all over.
    3 tbsp extra virgin olive oil + more as needed, 1/2 tsp sea salt + more to taste, 1/2 bunch fresh dill, 1/2 bunch fresh chives or 3 scallions
  • Bring a small pot of water to a boil and add the eggs. Cook for 6 minutes and drain under some cold water. Gently peel them and cut them in half. Place the eggs cut side up on top of the purple potato salad, and season all over with the cracked peppercorns, red pepper flakes and more sea salt to taste.
    4 eggs
  • Garnish with some fresh dill, chives and the toasted pepitas. Finish with a nice drizzle of extra virgin olive oil and serve warm.

  1. You my lady are crazy clever. I heart the bajinkas outta of this beautiful potato salad. Everytime I cook the purple potato, they loose a lot of the vibrant colour. Yours however, did not. Shall try using your method. 🙂

    Last weekend I attempted 3 times to make macarons, ruined every batch, which was disheartening. Also made some spicy pepper sauce, and zucchini fritters. Got plenty of sauce for you to come on over and try, and Ill be attempting this beauty this weekend. 🙂

    1. hahaha @Anna you crack me up! That happened to me before, that is why I cook them whole and then cut them. Such an AHA moment fo rme lol ! Yes I am all about the spicy pepper sauce and zucchini fritters. Macarons are better bought in my opinion lol (clearly I don’t make any)

  2. Those potatoes are just amazing!!!! I wish we got purple potatoes here in WA, but I have never seen them in stores or at farmers markets. We seem very short on potatoes. In the UK I used to love Anya potatoes but I can’t buy them here either. Are the potatoes a waxy variety? Just trying to think what I could sub in. Although I think my salad will look very boring in comparison!
    The purple are just stunning! Oh and the eggs!!! Perfectly cooked!

    1. They are just a purple variety of fingerlings, they behave the same as well. If you can’t find any purple ones ask the produce manager to bring heirloom fingerlings. They will be mixed with golden and pink ones. Meanwhile to pretty up a potato salad, I would suggest lots of edible flowers sprinkled over the top 🙂

  3. I used to sell purple potatoes in a grocery store. I NEVER made anything with them. Your recipe is so pretty I will go get some purple potatoes and start cooking those creamy chicken eggs pronto!

        1. Hi Lynn, I usually find them at the Farmers Market and the grocery store. Sprouts and Whole Foods usually but they are very seasonal. SO whenever I see them I store them in my fridge because they last for a while.
